  1. 1 cup Pigeon Pea Lentils or Toor Daal
  2. 2 cups Rice
  3. For the Sambar powder-
  4. 2 tsp Coriander Seeds
  5. 2 tsp Urad Daal or Black Gram
  6. 2 tsp Bengal Gram or Chana Daal
  7. 4-5 Dry Red Chillies
  8. 1 tsp Fenugreek Seeds
  9. 1/2 cup Coconut powder
  10. For the preparation of Sambar-
  11. 1 Ginger shredded
  12. 10-12 pieces Drumsticks
  13. 1/2 cup Okra or Bhindi
  14. 2-3 Tomatoes chopped
  15. 2 Onions chopped
  16. 1/2 cup Bottle Gourd chopped
  17. 3-4 Brinjals cut into pieces
  18. 1/2 tsp Turmeric powder
  19. 1 tsp Red Chilli powder
  20. For the tempering-
  21. 2-3 tbsp Ghee
  22. 1/8 tsp Asafoetida or Hing
  23. 2 Sprigs Curry Leaves
  24. 2 tsp Salt or to taste
  25. 1 tbsp Black Mustard Seeds
  26. 1/2 cup Tamarind water

Steps to make to make Sambar Rice

  1. Prepare Rice as per your requirement and keep aside. Meanwhile dry roast all the ingredients mentioned under Sambar powder and grind to a powder. Set aside.
  2. Pressure cook Daal and Vegetables with some Ginger Turmeric, Red Chilli powders and Salt. Set aside. In a large pot, heat Ghee and prepare the tempering.
  3. To this prepared tempering, add in the cooked Rice and the Vegetables along with Daal. Add some Tamarind water as well and adjust Salt according to one's own taste. Cook on a low heat for about 10-12 minutes or so. That's it. All done and absolutely ready. Dish it out piping hot with Poppadums or Papad alongside. Enjoy! Yum!
