Ingredients and spices that need to be Prepare to make Sambar:
- 1/2 cup Toor Dal / Arhar Dal / Pigeon Pea/ Rahar ko Dal
- (If you can't have Toor Dal for some reason use Masoor Dal)
- as needed Tamarind water
- as needed Water
- as required Turmeric powder
- as per taste Salt
- 2 tbsps Grated/ Grinded Coconut
- as required Few Curry leaves (optional)
- Sambhar Masala
- 1 Tsp oil
- 1 small marble Hing or 1/2 Tsp Hing powder
- 3 tsp Coriander/ Dhania seeds
- 1 Tsp Chana Dal
- 1 Sprig Curry leaf
- Vegetables (add the amount as per your desire)
- 5-6 Bhindi
- as required Small Pumpkin
- As required Small Brinjal
- 1-2 Drumsticks
- Tempering
- 1-2 tbsp Veg oil
- 1/2 Tsp Mustard seeds
Steps to make to make Sambar
- Along with the oil roast the above ingredients for Sambhar masala, (crumble the hing piece, if using the solid type Hing, otherwise mixer grinder blade can break). Dont over fry make it only reddish colour.
- Cut the vegetables, I don't make it too small, so that it even if it's soft and cooked, it holds it's shape otherwise it gets mashed in the Dal. Boil the vegetables in tamarind water. Add turmeric and salt too and once it starts boiling simmer for 10 more minutes or till raw smell of vegetables goes off, by this time the Vegetables is almost done also.
- Seperately Cook dal in cooker with 3/4th cup water in a pressure cooker or slowly in a kadai or pot with enough water, adding hot water as needed till it mushy and cooked for almost 40-50 minutes.
- In the meantime,grind the roasted spices,first dry powder, then add little water after you see that the seeds are powdered. Now grind once again,add to boiling vegetables. In same jar take 2 tablespoons coconut and grind finely with little water, add to the veggies. Now put the cooked dal to the veggies after mashing with the wooden blender or vice versa. Mix well,check salt.
- Cook for sometimes. Check consistency of the Sambhar. Don't overcook, otherwise the veggies will get mashed in the Sambhar. Temper with mustard seeds in oil. If you want add curry leaves too. Have with Idli, Dosa, Rice etc.
