  2. 3-4 chunks boiled yam
  3. 1/4 cup grated beetroot(boiled)
  4. Dry masala
  5. 1 Tbsp coriander seeds

  9. 2 mace
  10. 1 large cardamon
  11. 2 green cardamom
  12. 3 cloves

  22. 2 Tbsp ginger-garlic paste
  23. 1 fistful of fresh mint leaves
  24. 1 tsp rose water
  25. 2 Tbsp roasted besan
  26. as per taste Salt
  27. 1 tsp+ 1/4 cup melted ghee
  28. as required Coriander and mint chutney
  29. As required Walnut and curd dip

Instructions to make to make Galouti Rajma Kebabs

  1. First roast the dry masala. Roast red9 chilli and cashews.
  2. Grin the roasted ingredients to coarse powder. Set aside. Grind boiled rajma, yam and green chilli to coarse dough.
  3. Mix roast masala, ginger-garlic paste, fried brown onion(birista), mint leaves, grated beetroots and roasted besan. Mix well and make the rajma dough. Keep in refrigerator for an hour.
  4. Heat 1 tsp ghee and mix with the rajma dough. This will ensure cooking of kebab from inside also.
  5. Heat rest ghee in the pan. Make kebabs and ensure to roast kebab from all sides.
  6. To prepare Walnut, curd dip take 1/3 cup curd, 1/2 tsp chopped green chilli, salt and 4 -6 toasted walnuts chopped. Mix all and the delicious walnut curd dip ready for the kebabs.
