  7. 1 /2 teaspoon turmeric powder-
  8. For stuffing:
  9. as required oil,
  10. as required sooji(fine),
  11. 1 teaspoon jeera,
  12. 1 teaspoon mustard seeds,
  13. 1 teaspoon heeng
  14. 1 teaspoon Kalonji seeds,
  15. 1 teaspoon sambar powder- ,
  16. 2 dried red chili
  17. 5-6 Curry leaves,
  18. 1 teaspoon red chili powder,
  19. 1 teaspoon jaggery powder
  20. as per taste Salt (as reqd),
  21. 1 teaspoon urad dal

Instructions to make to make Dry stuffed mathri/ kachori

  1. In a bowl add atta/ maida and then add sooji, lukewarm oil, salt and knead the dough.
  2. Add water if reqd and then keep it aside for 15 mins
  3. For stuffing, heat the oil in a pan and add jeera, rai, urad dal, curry leaves, dried red chili, turmeric powder and rava and roast it well.
  4. Add salt to the mixture and then add jaggery powder, red chili powder. Cool the mixture down.
  5. Now take the dough and make round balls and roll it like pooris.
  6. Now take the stuffing and place it in between and close the pooris well. Like we make in parathas and then again roll it thin.
  7. Similarly make all the stuffed pooris.
  8. Now for frying heat the oil and just low the flame and add the mathris.. After sometimes it will get puffed up. Fry it in low flame only.
  9. If you high the flame it will get crisp from outside but won't get cook from inside.
  10. Now the kachoris/stuffed mathris are ready. Enjoy it with savoury with tea or you can take it while travelling.
  11. Tips : roll the pooris thin otherwise it wont get puffed up.
