  1. 1 cup Maida
  2. 1/2 cup ghee
  3. 1 cup Sugar
  4. 1/2 cup water
  5. 4-5 drops Vanilla essence or kevada essence
  6. 1/2 tsp Cardamom powder
  7. 1 pinch Food color (saffron & green)
  8. as required For decorating chopped Dry Nuts:-
  9. as required Few sliced cut pieces of Almonds
  10. as required Few sliced cut pieces of pistachios

Steps to make to make Bombay Ice Halwa (Mahim Halwa)

  1. Heat nonstick pan and add ghee. When ghee melts, add Maida and mix well. Roast maida on low flame for about 8 mins until it become very light golden colour.
  2. Meanwhile, take another pan. Add sugar and water in it. When sugar melts, turn gas on medium flame and cook syrup for 5 mins. Next turn gas to the low flame and add Vanilla essence, cardamom powder. Mix well. Syrup consistency should be little thick. (It should not be sticky one string)
  3. When Sugar Syrup is ready, transfer it into roasted Maida and mix well. After 5 minutes, the mixture starts to thicken and turns into a paste consistency.
  4. Switch off the gas. Let mixture cool down. If the mixture doesn't dried up in 5-7 minutes, then cook the mixture on medium flame for 3 to 4 minutes.
  5. Divide into 3 portions. Add saffron colour in one portion and green colour in another portion. Keep third portion as it is (I.e. white) If the mixture is too dry, then wet your hand and knead the mixture. Do not add water into the mixture.
  6. Take one portion and transfer on butter paper and cover with another butter paper. Using rolling pin, roll it evenly thin / thick (thickness as desired). Similarly, do other 2 portion.
  7. Some of Mahim Halwa I did with combining 3 layers. Arrange one rolled layer on another layer. Keep white layer between the both saffron and green layers, while removing butter paper between layers very carefully. Sprinkle chopped dry Nuts and cover with butter paper.
  8. If you desired to sprinkle dry Nuts on both sides of halwa. Flip carefully to the side of saffron, remove butter paper and sprinkle few dry Nuts and again cover it with butter paper. After sprinkling, roll once or twice on layered with rolling pin.
  9. Cut the edges of halwa. Then cut into rectangle or square pieces with pizza cutter. As Halwa is too soft, keep aside at room temperature to let it set for 30 minutes or refrigerate for 10 to 15 minutes
  10. Mahim Halwa is ready to serve. I wanted to made this Halwa with ingredient semolina, but as it was difficult to create 3 layers, so instead I used Maida and recreated this recipe from YouTube -Madhura Recipe, with little changes.
