- Peel and chop lauki into thin circles and then into thin wedges like matchsticks or julienne. Wash and drain the water completely in a strainer. Dry roast moong dal and parboil or pressure cook just 1 whistle. Open the lid and set it aside. Heat oil and fry red chili.Set aside. Sprinkle mixed whole spices and when they splutter, add the chopped lauki. Add parboiled moong dal, salt, and sugar to taste, ginger paste, and dry spices. Toss and cook on low flame.
- Sprinkle little water if needed. As such bottle gourd releases water. Cook till dry and sprinkle 1 tsp ghee and chopped coriander. Toss and garnish with slit green and dry red chilies.
