  25. 1/2 cup thai basil leaves
  26. 1 small kafir lime leaf
  27. 1 tsp vinegar
  28. 1/4 tsp salt

Instructions to make to make Thai Green Curry

  1. First we will make a green paste for thai curry. (the measurements are mentioned above in thai green curry section) For that in a pan add whole coriander, whole pepper and cloves, dry roast them for about a min and then coarsely grind them.
  2. Then cut the lemon stalks into small pieces and add it into the same grinding jar. Then add garlic and ginger pieces, chopped onion, coriander leaves, thai basil leaves, chopped green chillies, 1 kafir lime leaves, vinegar and some salt to taste. Grind all these ingredients into a fine paste, as fine as you can. Keep this paste aside.
  3. Now add a tbsp of oil in a pan and add all the chopped veggies in it. Sprinkle some salt and saute all of them for about 2 mins. Then remove them from the pan and keep them aside.
  4. In the same pan add some more oil. Then add the green grinded paste in it. Saute it for about 3 to 4 mins on a low flame. Then add the stir-fried veggies to it. Fry them all with the masalas for 2 more mins.
  5. Then in the coconut milk add a tsp of cornflour and mix it well and pour it into the veggies. Combine everything well. Now cover the pan and let it cook on a low flame for about 8 mins.
  6. Then add few basil leaves in it. Check the salt. Add 2 tsp sugar Then again cover the pan and cook for 2 more mins. Your Thai Green Curry is now ready to serve.
  7. Serve it with some hot steamed rice.
