Ingredients and spices that need to be Get to make Machboos:

  1. 2 cup long grain basmati rice, washed soaked in water for 1 hr
  2. 4 chicken leg pcs,
  3. For Marination..
  4. 1 tbsp garlic paste,
  5. 1 tsp ginger paste,
  6. 1 tsp black pepper crushed,
  7. as per taste Lil salt,
  8. as required Juice of 1 lemon,
  9. Spice Mix...
  10. 1 tbsp coriander seeds,
  11. 1/4 tsp black pepper,
  12. 8 green cardamom,
  13. 2 tejpatta,
  14. 1 tsp Jeera,
  15. 1 bari Elaichi,
  16. 5 dry red chilli,
  17. . 5 laung,
  18. . 3 pc dalchini,
  19. 1/2 tsp white pepper powder,
  20. 1/2 tsp haldi powder,
  21. 6 tbsp oil,
  22. 2 med sized onion sliced,
  23. 3 med sized tomato chopped finely,
  24. Dry fruits...
  25. 20 badam,
  26. 20 kaju,
  27. 15 kishmish,
  28. 1/2 tsp lemon zest,
  29. to taste, Salt
  30. 4 tbsp desi ghee,
  31. 1 tsp gulab jal or rose water,

Steps to make to make Machboos

  1. Dry roast all the ingredients of spice mix except haldi & white pepper powder, cool it, grind it to a coarse powder. Now mix haldi & white pepper powder with it.
  2. Take chicken leg pcs in a dish, make gashes, keep aside.
  3. Mix all the ingredients of marination, rub it onto the leg pcs, keep it in the fridge for 1 hour.
  4. Take a broad heavy bottom pan, add oil, heat it.
  5. Add onion, stir fry it until light brown. Now add marinated chicken leg pcs, stir fry it for a minute.
  6. Add tomato & salt, give a stir.
  7. In goes lemon zest & 2 tbsp spice mix, also add rest of the marinade.
  8. Stir fry it for a minute, sprinkle some water, lower the flame, cover it with the lid, cook it for 3 minutes.
  9. Open the lid, increase the flame, add 3.5 cup water, boil it.
  10. Cover it again, lower the flame, cook it until chicken is almost cooked. Take out the chicken pcs, keep aside.
  11. Strain rice, add in the same gravy, also add salt, give a stir. Let it boil till water is almost absorbed. Lower the flame, cover it again,cook it for 2 minutes.
  12. In the mean time, fry dry fruits in 2 tbsp ghee one by one till light brown, keep aside.
  13. Now add rest of the ghee in the same pan, add chicken pcs, sprinkle spice mix, cook it on moderate flame, roast it nicely till golden brown.
  14. Place the chicken pcs over the rice. Cover it again, dum it on low flame till done. Do not stir in between.
  15. Turn off the flame, open the lid after 10 minutes.
  16. Take out in a serving dish, garnish it with fried dry fruits.
  17. Serve it with any salad 🥗.I have used chicken leg pcs...better to have leg oc along with thigh portion..
