The main seasoning ingredients of this dish apart from onion, tomato etc is the Special Middle Eastern Spice Powder called Baharat (which is a mix of Cummin, coriander, cinnamon, chilli powder, nutmeg, cloves, Cardamom, black peppercorns etc. mixed in different proportions) which is readily available in every Local Arabic spice shop or you can make it at home too) & other is Loomy - Dried Black Lime which is used in many Middle Eastern cuisines. It imparts a nice tangy flavour to the dish. If not available use lemon juice and zest. It can be cooked in ghee, olive oil or any Veg oil you prefer. Every household recipe differs a bit and has their own version of cooking it, some cook the chicken along with rice in its broth some after the chicken is cooked takes out the chicken and only cooks the rice in its broth, and put the chicken pieces on top of the rice after its cooked on the serving platter, I prefer the first method. I have used my homemade chicken broth in this, if you don't have you can use only water too but broth enhances the flavour more. Ingredients and spices that need to be Make ready to make Al Machboos:

  1. 1 kg Whole Chicken cut into 4 pieces only
  2. 1.5 tbsps Baharat * (Middle Eastern Spice Blend)
  3. 200-250 gms Onion Chopped
  4. 250 gms Tomato Chopped
  5. 40 gms Ginger made into paste
  6. 40 gms (8 garlic cloves)Garlic made into paste
  7. as required Few sprigs of Parsley Chopped
  8. as required Few sprigs of Cilantro Chopped
  9. 2 tbsp Ghee or 1 tbsp Veg oil
  10. 1/4 tsp Turmeric powder
  11. as per taste Salt
  12. 1.5 cups Long Basmati Rice washed and soaked for at least 30 mins
  13. 3 1/3 cup Chicken Broth or water
  14. 2 inches Cinnamon stick
  15. 3 Green Cardamom
  16. 2 Loomi / black dried whole lemon
  17. For Garnishing (optional)
  18. 10-15 Cashew nuts
  19. 15-20 Raisins
  20. 10-15 Almonds
  21. As needed Parsley and Cilantro chopped
  22. Baharat
  23. 1 tbsp Black Peppercorns
  24. 1 tbsp Cummin seeds
  25. 2 Tsp Coriander seeds
  26. 8-10 Cloves
  27. Seeds only of 10-12 Green Cardamom
  28. 1.5 tbsp Chilli Powder or Kashmiri LAL Mirch powder for color *
  29. if you don't like chilli heat use Kashmiri or Degi Mirch powde
  30. 1 Tsp Grounded Cinnamon
  31. 1/4 tsp Grounded or grated Nutmeg

Instructions to make to make Al Machboos

  1. Heat ghee and oil in a pot with thick base. Fry the nuts and raisins first and keep it aside. Then braise the chicken pieces in it. Let it brown a bit. I did two at a time. Prepare other ingredients accordingly as mentioned above.
  2. Once the chicken is braised, keep it aside. Now In the same remaining ghee and oil add in the cinnamon and cardamom (just crack open the Cardamom pod to avoid it from bursting) and once it crackles, add in the onion and saute it till it turns pinck and translucent, then add the ginger garlic paste and again cook further for about 5-10 mins. Then add the Baharat spice mix and turmeric powder and cook more. Add little chicken broth or water to avoid it from burning.
  3. Then add the chicken and mix well and cook. After that add tomatoes and loomi and salt and mix well and cook till the raw flavour of tomato goes off. Add in Chopped Parsley and cilantro. (Add water or broth as needed. While cooking the chicken, I added 1 cup broth in total.)
  4. Once done, add the washed and soaked rice and mix it gently so that the rice doesn't break. Add & 1/3 cup water or chicken broth as the gravy already has moisture. Check salt, if needed add it and mix. Cover with a lid tightly and let it cook in its own steam / dum just as we cook biryani for about minutes. Put off the flame and let it rest for about 20 minutes. Open and fluff up the rice. Put it on a serving platter and garnish with the fried raisin & nuts and chopped parsley and cilantro.
  5. Serve hot. I love it with Tzatziki and Fattoush Tzatziki recipe
  6. For Baharat Masala : Dry roast all the whole spices, cool it and grind it into powder. Once powdered add the Chilli powder, Nutmeg and Cinnamon and blend it. Your Baharat is ready.
