  3. 1/2 inch ginger
  4. 2 tbsp mustard oil
  5. 1/2 tsp Nigella seeds /kalonji

  7. 1/4 tsp asafoetida

  18. 1 tsp yellow mustard seeds
  19. 1/2 tsp fenugreek seeds
  20. 1 tsp fennel seeds
  21. 1/2 tsp Nigella seeds/Kalonji
  22. 1/2 tsp Cummin seeds
  23. 1/2 tsp carom seeds
  24. 3 dry red chilli

Steps to make to make Achari Aloo

  1. For making Achar masala... Dry roast all the ingredients for 1-2 minutes ot till aromatic. Keep the flame on low. Do not over roast. Once it's done, let it come to the room temperature. Further, grind it coarsley. Keep it ready. In this recipe we need 2tsp achar masala, and the remaining can be stored for a month in airtight container.
  2. Blend ginger and tomato till smooth. Keep it ready.
  3. Wash and boil potatoes with 1/2tsp salt in a pressure cooker till 2 whistles. Keep the flame on medium-high. We need 90% cooked potatoes here. When it is little warm pell the potatoes. Cut potatoes into halves.
  4. Heat mustard oil in a wide heavy pan or kadai. Add kalonji and mustard seeds and asafoetida fry for few seconds. Addcurry leaves saute for a minute.
  5. Further, dd the potatoes and mix. Saute and cook in high flame for 2 minutes. Now, add salt, turmeric and kasmiri mirch powder.
  6. Combine everything cover and cook for 4-5 in low-medium flame. Further, add ginger-tomato paste. Cover and cook for another 3-4 minutes.
  7. Now add 2tsp achar masala and coriander powder, mix all together. Cover and cook until it raw smells goes and oil release.
  8. Finally add dry mango powder, slices chilli and chopped coriander leaves, Mix well.
  9. Serve hot or cold. Best serve with puri or paratha or as a sider dish. Sometimes I love to enjoy hot Achari Aloo as a evening snack with a cup of tea.
