  1. 4 purple brinjal
  2. 50 gm green lasun
  3. 100 gm green spring onion
  4. 3 tsp green chilli, lasun, coriander paste
  5. 2 tsp roasted peanut powder
  6. 3 tbsp oil
  7. 1 tsp turmeric
  8. to taste Salt
  9. as required Coriander chopped for garnishing
  10. 1 onion
  11. 1/2 tsp mustard seeds
  12. 1/2 tsp asafoetida

Instructions to make to make Brinjal bharit (Maharashtrian thali)

  1. Grease some oil to brinjal & put some cuts with knife on it. On gas burner roast brinjal till outer part becomes black after roasting. remove it from flame & cover it with lid
  2. Chop spring onion, green lasun & onion. After 10 min. Remove black portion of roasted brinjal and take white cooked portion
  3. In a kadhai add oil, mustard seeds, asafoitida and green chilli, lasun pate. Saute it. Then add onion, spring onion & green lasun, turmeric. Again saute it for 2 min.
  4. Then add cooked brinjal. Mix it properly. Lastly add peanut powder, salt, coriander. If required add green coriander to it.brinjal bharit is ready to serve. Serve with chapati, bajre ki bhakri.
