  20. 2-3 tablespoon oil
  21. 2 large onions sliced
  22. 1 bay leaf
  23. 1 teaspoon turmeric powder
  24. 2 tablespoon kashmiri red chilli powder
  25. 1 tablespoon garam masala powder
  26. 1 less spicy green chilli
  27. Handful Coriander leaves
  28. 2-3 tablespoon curd

Steps to make to make Mutton Sukka

  1. Clean the mutton with water. Add salt, turmeric, coriander powder, lemon juice and hot water and keep for boiling. Cover and cook for 30-40 minutes. Cooking time will vary on the type of mutton and portion. Alternately, you can pressure cook the mutton with 3-4 whistles and simmer for 10 -15 minutes. Check the mutton pieces with a knife or spoon if it is well cooked.
  2. Now in a pan, dry roast coconut, onions, whole garam masalas, garlic, cuminseeds. Coconut and onions should be roasted till it turns dark brown. Cool down the mixture completely and add ginger, coriander and blend in a mixer jar. Add little water at a time and blend into fine paste.
  3. In a pan or kadhai, heat oil. Add onions, bay leaf, and saute well. Now add the coconut masala paste and turmeric, chilli powder and salt. Saute well till everything is mixed well. Now add the cooked mutton pieces and curd and mix well. Finally add the green chillies and coriander leaves and garam masala and give a quick stir.
  4. Serve this lip smacking delicious Sukka mutton with Bhaakris or rotis.
