- 1 cup Gobindobhog variety Rice
- 1/2 cup+ 2 tbsp Sona Moog Dal
- 2 generous handful of fresh Spinach
- 1 small bowl of green peas (approx 180 grams)
- 1 tsp cumin seeds,
- 2 bay leaf,
- 3-4 cardamom pods,
- 3-4 cloves,
- 1 small cinnamon stick,
- 1 tbsp + 1 tsp ginger paste
- 1 tbsp sugar,
- as required salt
- 2 tbsp ghee + 1 tbsp ghee
- 2 dry red chilli,
- 4-5 slit green chilli
- 1 medium tomato (roughly chop)
- 1/2 tsp turmeric powder
- 1 litre water + more (as per texture / consistency)
Steps to make to make Palak Khichdi
- Soak rice for 40 - 50 minutes
- Roast moog dal by stirring continuously for a uniform roast, let it cool, wash properly and soak for 30 - 40 minutes
- Assemble all other ingredients
- Roughly chop spinach
- In pan / kadhai, add 1 tbsp oil, add chopped spinach + little salt and sauté for 8 - 10 minutes till rawness goes off and moisture evaporates. Spinach will shrink and transfer to a plate and keep aside.
- Now take a pressure cooker or deep pan, add rice + Dal + salt + turmeric + chilli + 1 tsp ginger paste + 1 bay leaf + tomato + green peas + 1 litre water (approx)
- Boil everything under medium flame, let them boil / cook properly. If required add more water. Don’t overcook, it is not a mushy textured Khichudi.
- Now in pan / kadhai, add 2 tbsp ghee, add 1 bay leaf + 1 tbsp ginger paste + cumin seeds + dry red chilli + cardamom + cloves, let everything get fry and turns aromatic.
- Now add this tempering to Rice Dal mixture, give a nice mix, add sugar + spinach and cook for 3-4 minutes.
- Now add 1 tbsp ghee and check for salt, simmer for 3-4 minutes.
- Now Palak Khichudi is ready to serve.
- Serve with Papad or any other fritters of your choice.
