  9. 1 Tbsp cumin seeds
  10. 1 tsp red chilli powder
  11. 1 tsp Chaat Masala
  12. 1 tsp Aamchur powder
  13. 1 tsp Hing
  14. As Per Taste Salt
  15. As Required Black salt
  16. 1 Tbsp Bhujia
  17. 1 Tbsp cashew nuts chopped
  18. 1 Tbsp raisins chopped
  19. 1 Tbsp almonds chopped
  20. 3 Tbsp tamarind chutney
  21. As Required Oil to deep fry

Instructions to make to make Mini Kachori

  1. For Dough - In a bowl add maida, oil, salt and mix well, add little water to make a soft dough, rest for 15 min covered.
  2. For stuffing - in a pan roast whole black pepper, whole coriander seeds, whole fennel seeds, whole cumin seeds for 2 mins, add to a blender, and coarsely blend.
  3. Add this to a bowl.
  4. Add to a blender Bhujia and coarsely blend. Add this to the roasted masala.
  5. Add salt, black salt, red chili powder, amchur powder, Chaat masala, and Hing, mix
  6. Add chopped raisins, chopped cashew nuts, chopped almonds to the mix and mix well.
  7. Add tamarind chutney to the mix and mix well to make small doughs that would be going in as a stuffing.
  8. Knead the dough again for 2 mins, make small balls and make a bowl shape, add the filling ball and fold from all corners to a small ball, there should be no cracks.
  9. Complete for the batch.
  10. In a heavy-bottomed wok heat oil, reduce to low flame and gently add the balls, allow the balls to fry without touching for 4-5 mins, gently shake the wok and gently turn the balls.
  11. Deep fry golden and set aside.
  12. Plate and enjoy. You can’t stop at one.
