- 1/2 cup Moong Dal
- 300 gms Louki / Dudhi/Bottle Gourd - peeled & small pieces
- 1 Cinnamon stick
- 1 leaf Bay
- 1 Tsp Cumin seeds
- 1 Whole Dry Red Chilli
- 1 tbsp Ginger paste
- 2 tbsps Mustard oil
- 1 tbsp Ghee
- 1/4 Tsp Garam masala powder
- 1 pinch Sugar
- as per taste Salt
- As Per Required Little Cilantro / Dhania Patta
Instructions to make to make Bhuna Moong Dal with Dudhi /Louki Moong Dal Sabzi
- Dry roast the Moong Dal till it becomes a little reddish and you can smell the aroma of the roasted Dal, put in a bowl and immediately pour enough cold water and let it soak for at least 30 minutes. Prepare other ingredients. (Check other Bhunna Moong Dal recipes)
- Wash the Dal thoroughly. Heat oil in the Kadai or pot. Add whole dry red chili, Cinnamon stick, Cummin seeds, Bay leaf then add the ginger paste and saute it. Then add the Louki / Bottlegourd and saute / bhunno it for 5-10 minutes. Add in the roasted and washed Dal and bhunno it and Turmeric powder and mix well. Add the cilantro too. Add salt as per taste and bhunno by adding little water as needed.
- Then add 1 cup hot water, boil, and cook till the Louk and Dal is cooked nicely. This is a dry kind of preparation, so check and add little water at a time till it gets cooked. You may need approx. about 1/2 cup water more. Once done check salt, add sugar, garam masala, and ghee, mix well, cover, and cook for another 5 minutes or so and your Dal is ready to be served with Roti or Parathas or Puri.
