- 1 1/2 bowl suji
- 1/3 bowl cooking Oil for moyan
- as per taste Salt
- as required Cooking Oil for deep frying puris
- 4 raw potatoes
- 2 tomatoes
- 1 piece ginger
- 1/2 bowl fox nuts
- 5 cashew nuts
- 2 tbsp cooking oil
- 1/2 tsp cumin seeds
- 1/4 tsp red chilli powder
- 1/4 bowl turmeric powder
- 1/4 tsp garam masala
- 1/4 tsp coriander seeds powder
- 1 glass water
- 1 tbsp kasuri methi
Instructions to make to make Suji ki puri & Shahi Aloo
- Grind semolina in mixer to a fine powder. Add cooking oil and salt and mix well.
- Knead a soft smooth dough by adding water slowly. Knead it for 2-3 minutes till smooth. Now take a portion of dough and make a ball. Like wise make all the balls. Cover it with wet muslin cloth.
- For making shahi Aloo: peel and wash potatoes. Chop in small cubes. Add cooking oil in a pressure cooker. Roast fox nuts and cashews and remove in a plate. Now add cumin seeds in remaining oil. Add grated ginger and saute for 1 minute. Add pureed tomatoes and roast for 2 minutes. Add all dry masala and mix. Add chopped potatoes, roasted foxnt and cashews and stir for a few seconds.
- Add 1 glass water and mix. Place the lid and cook till 2 whistles and switch off the flame and let pressure releases automatically
- Now Roll all puris. Heat cooking oil in a wok and deep fry puries till golden brown colour.
- Remove it in a plate. Make all puris.
- Serve crispie puris with Shahi Potatoes.
- I prepare it every deepawali.
