  15. 1 tsp poppy seed
  16. For covering
  17. 1 1/2 cup wheat flour

  19. Pinch salt
  20. 1/2 cup milk
  21. as required Food colour(red, yellow, green)
  22. as required Oil for frying

Steps to make to make Colourful panjiri diyas

  1. Heat 1tbsp groundnut oil in a pan. Roast gond until puffed, keep aside. In the same oil roast the makhane until crisp, remove and keep aside. Add another 1tsp oil in the pan roast, almond, cashew nuts, pistachio, coconut, musk melon seed, flaxseeds, poppy seed until brown. Lets the mixture cool down and grind them to make a coarse powder.
  2. In the remaining oil roast wheat flour and semolina on medium heat until golden brown. Keep straining continuously. Remove the pan from the heat and let the mixture cool. Once the flour mixture is cooled add powdered sugar, dry ginger powder and ground dry fruits. Mix well and the stuffing is ready.
  3. For covering: take ½cup wheat flour in a bowl. Add salt and 1½tbsp hot ghee in it. Properly mix it to avoid lumps. Add milk step by step as per requirement and knead a hard dough. Now divided it into a four part and add food colours to each part(red, yellow, green) and keep one part as it is. Make the desired shapes using yellow, red and green dough.
  4. Take the plain dough. Roll it using rolling pin and than cut it into small diya shapes. Stuff it with panjiri mixture. Brush the edges with wheat and water paste and placed another diya shape on top of it and seal. Decorate it with prepared colourful shaped. Seal it properly using wheat and water paste at every step.now deep fry it in ghee till the diyas turn crispy. Colourful panjiri diyas ready to serve.
