  1. 500 gm Mutton Bone-in
  2. 1 inch Ginger
  3. 1/2 a bulb of Garlic
  4. 4-5 Green Chillies whole
  5. 200 gm Curd
  6. 1 bunch chopped Coriander Leaves
  7. 1 tsp Black Pepper powder
  8. 1 tsp White Pepper powder
  9. 2 tsp Salt or to taste
  10. 1 tsp Kasuri Methi or Dry Fenugreek Leaves
  11. 1 tsp Garam Masala
  12. 1 Onion chopped
  13. 100 gm Fresh Cream
  14. 2 Green Cardamoms
  15. 1 Black Cardamom or Badi Elaichi
  16. 3-4 Cloves

Instructions to make to make Afghani Mutton Gravy

  1. First of all, you need to either pressure cook or slow cook mutton bone-in with little salt and pepper. I had used a pressure cooker for this. Heat oil in a cooker with kasuri methi, garam masala and black pepper powder. Fry for a minute and then add mutton bone-in to it. Roast well. After about 5-6 minutes, add some water accordingly and pressure cook as required.
  2. Meanwhile add curd, cloves, green cardamom, black cardamom, green chillies, ginger, garlic, chopped onion and coriander leaves to a blender jar. Blitz until smooth. Keep aside.
  3. Let the steam settle down in the pressure cooker before opening the lid. After that, add this smooth curd mix to the pressure cooker along with fresh cream. Do not add much of water while pressure cooking the mutton. Remember this important tip.
  4. Mix well and let it simmer on a medium high heat for about 15-20 minutes or until the raw smell fades away and it's roasted well. If required, add some hot water to adjust the consistency. It's usually a semi thick gravy.
  5. Adjust salt according to taste at this point. Garnish with a little more of fresh cream. Serve hot immediately alongside naans and tandoori rotis. Yum! Enjoy!
