Ingredients and spices that need to be Take to make Kadhai Gosht or Mutton Kadhai:

  1. 1 kg mutton on bone, curry cut (preferably front arm),
  2. 6 tbsp mustard oil,
  3. 4 med sized onion sliced,
  4. 1 tbsp garlic paste,
  5. 1 tsp ginger paste,
  6. 1/2 tsp haldi powder,
  7. 1 tsp green chilli paste,
  8. 2 tbsp fresh tomato puree,
  9. as per taste Salt
  10. 2 tbsp kaju paste,
  11. 1 tsp Kashmiri red chilli powder,
  12. For Kadai Masala.
  13. 1 tsp saunf,
  14. 3 tsp dhania sabit,
  15. . 1 tsp Jeera,
  16. 1 tsp kali mirch sabit,
  17. 6 dry red chilli,
  18. 6 choti Elaichi,
  19. 1 bari Elaichi,
  20. 2 tbsp dahi,
  21. 2 tbsp desi ghee,
  22. Pinch kasoori methi,

Instructions to make to make Kadhai Gosht or Mutton Kadhai

  1. First take a pressure cooker, add washed mutton, lil salt & 1/4 tsp haldi powder.
  2. Add 1 cup water, place the lid, give 4 whistles at high flame.
  3. Switch off the flame, allow it to depressurise naturally.
  4. Take out the boiled mutton, keep aside.
  5. Take a big wok, add oil, heat it.
  6. Add onion, stir fry it until brown.
  7. Now add Mutton pcs, stir fry it for a minute.
  8. Add ginger garlic paste, stir fry it until rawness is released. sprinkle lil water to avoid burning.
  9. Now add haldi powder & green chilli paste, give a stir.
  10. Add tomato puree & salt, mix it well.
  11. Lower the flame now, cover it with the lid, cook it until oil has oozed out.
  12. Open the lid, add kaju paste, mix it well.
  13. Now add Kashmiri red chilli powder, & 3 tbsp Kadhai Masala, mix it well.
  14. Stir fry it for a minute.
  15. Add dahi now, mix it well. Cook it covered at low flame until oil has surfaced.
  16. Open the lid, increase the flame, add kasoori methi & desi ghee, give a stir.
  17. Now add 2 cup water, mix it well. Give a boil.
  18. Lower the flame, cover it with the lid, cook it until gravy becomes a lil thick. Stir only once in between.
  19. Open the lid after 10 minutes. Take out in a serving bowl, garnish it with chopped dhania patta.
  20. Can be served along with Roomali Roti..
  21. For Gravy Masala...dry roast all the ingredients of kadhai masala. Cool it. Grind it to not so fine powder..
