- 1/2 cup Besan
- 1 pinch Turmeric powder (optional)
- 1 pinch Baking soda
- as needed Water
- As needed Veg oil to deep fry
- For Raita
- 1.5 cups Dahi/ curd / Plain Yoghurt
- as needed Boondi
- 1 small Boiled Potato cubed (optional)
- as per taste Lemon
- as per need Common Salt / Black rock salt as per taste
- 1 Tsp Sugar (optional)
- 1/2-1 Tsp Roasted Cummin and Coriander seeds coarsely grounded
- as per taste Chilli Flakes (as needed)
- 1 Small onion chopped
- as required Mint leaves chopped
- 1 chilli chopped
Steps to make to make Boondi Raita
- Mix the Besan, turmeric and baking soda and add water as needed and make into a thin runny batter. Heat oil in a kadai and with the help of a tablespoon pour & spread the batter and let it pass through a skimmer slotted spoon into the hot oil (don't overheat the oil and adjust the flame accordingly). Fry for a minute or two, it will be crispy, with the help of a slotted spoon take it out and keep it on a kitchen tissue paper to absorb the extra oil from it. In this way fry all the boondis.
- Dry Roast Cummin and coriander seeds and grind it. If you don't have chilli flakes, just grind few whole dry red chillies. Chop onion, mint and Chilli.
- In a blender take curd, roasted Cummin and coriander powder and salt and blend it. Pour it in a bowl and add in the onion, mint, chilli, boondi as needed and boiled potato cubes if you are adding. Garnish it with more roasted Cummin and coriander powder, chilli flakes, pomegranate and mint. Serve with Papad along with rice and Dal etc. Bon appetit!
